    Ingredients :

    For the salmon :

    • 4 salmon fillets (approx. 150 g each)
    • Juice of 1 lemon
    • 2 tablespoons chopped fresh dill
    • Salt and pepper to taste

    For the vegetable quinoa :

    • 1 cup quinoa
    • 2 cups water or vegetable broth
    • 1 red bell pepper, diced
    • 1 cucumber, diced
    • 1/2 red onion, chopped
    • Juice of 1 lemon
    • 2 tablespoons olive oil
    • Salt and pepper to taste

    Instructions :

    1. Start by cooking the quinoa. Rinse the quinoa under cold water, then add it to a saucepan with the water or stock. Bring to the boil, reduce the heat, cover and simmer for about 15 minutes, or until the quinoa is cooked and all the liquid has been absorbed. Leave to cool.

    2. Prepare the marinade for the salmon by combining the lemon juice, dill, salt and pepper in a bowl. Brush the salmon fillets with the marinade and leave to rest for a few minutes.

    3. Preheat a grill or non-stick pan over medium-high heat. Grill the salmon fillets for about 3-4 minutes on each side, until cooked.

    4. While the salmon is grilling, prepare the vegetable quinoa salad. In a large bowl, combine the cooked quinoa, diced red bell pepper, cucumber and red onion. Add the lemon juice, olive oil, salt and pepper, and mix well.

    5. Serve the grilled salmon on a bed of vegetable quinoa. You can add a touch of fresh dill on top for decoration.
